For my own tastes, I do not have a particular preference, but to prepare? Fish, always. I enjoy preparing meals most when it is truly from start to finish, so roe and crab do take some of the process out of it. Preparing the meat well is just as important as the cooking itself, so I like to be in control of that when possible.

[ It’s a quite point lost in the further explanation, but his lack of preference was more than simply indifference. Like all human food, it’s simply foul on his tongue since a demon’s sense of taste was different. It does make it a bit ironic that he enjoys cooking so much as a result, but he enjoys the process of cooking more than the result. Though when he’s praised for doing an excellent job, he certainly loves that too. ]

Though, you do ask a difficult question! I have favorites, but they are all so different that it is difficult to pick one above others. The process of making a cake is very different from preparing meat, but…

There is a recipe I am fond of that is simple at first glance, as it merely lamb, but it a very delicate, laborious effort. The lamb must be young and have high-quality meat, but from there I butcher it myself, since each plate contains five different cuts. You have the leg, breast, loin, rack and rillette. The bones are used to make a stock, and from there reduced to the sauce. It is all paired with Provençal vegetables and small braised onions. All complimented with thyme as its primary spice. It is not something I made often, as all the preparations took days, but it is well worth the effort in the end.

[ So, as is clear, Sebastian really is more of a chef than a cook and this kind of elaborate meal might give the impression that he was in the service of someone of high status. This is all explained as casually as if this were the sort of thing he made frequently, and… it kind of was. This is still an outlier for all the preparation needed, but Ciel’s everyday demands were still high. He gives a nod back to Voryn, gesturing to him generally. ]

Though if I may, what is your favorite dish to eat? After all, I have lately enjoyed the challenge of recreating peoples’ favored dishes, so perhaps yours may be my next project.
